Pasta e Fagioli
Also called Basta Fazool in southern italy, this is a meatless
pasta usually dominated by tomatoes. This recipe, however, is more like a stew.
Ingredients
- One pound dried white beans
- One cup of olive oil
- A whole clove of unshelled garlic
- One bay leaf
- One teaspoon or more crushed or ground hot red pepper
- fresh parsley
- 0.5 pound of small diameter whole wheat macaroni
- salt
Directions
- Wash beans
- Place in salted water, three parts water to one part beans
- Soak overnight or bring to boil, boil two minutes
- Let stand, covered, for one hour
- Bring beans to boil again
- Skim foam off and add oil, garlic, and bay leaf
- Simmer for about two hours, or until tender
- Cook pasta for six or seven minutes
- Drain pasta and save some water
- Stir pasta and red pepper into beans and simmer until pasta is soft
- Garnish with red pepper to taste, add parsley
