Antipasti recipes - Minestra Dagnello
 

 A heavy lamb soup sometimes mixed with white wine.

Ingredients

  • 300g lean ground lamb
  • 200g home-made narrow noodles
  • 200g tomatoes
  • 1/2 onion
  • One carrot
  • One stalk celery
  • One clove garlic
  • 1/2 glass white wine
  • One liter broth
  • Three tablespoons olive oil
  • Salt and pepper

Directions

  • Chop celery, carrot, and onion finely
  • Saute in three tablespoons of olive oil
  • As onion begins to change color, add wine and allow to evaporate completely
  • Add tomatoes
  • Continue to cook over low heat for one hour, add broth
  • Add noodles, cook for a few minutes
  • Serve with freshly ground pepper
