Antipasti recipes - Minestra Dagnello
A heavy lamb soup sometimes mixed with white wine.
Ingredients
- 300g lean ground lamb
- 200g home-made narrow noodles
- 200g tomatoes
- 1/2 onion
- One carrot
- One stalk celery
- One clove garlic
- 1/2 glass white wine
- One liter broth
- Three tablespoons olive oil
- Salt and pepper
Directions
- Chop celery, carrot, and onion finely
- Saute in three tablespoons of olive oil
- As onion begins to change color, add wine and allow to evaporate completely
- Add tomatoes
- Continue to cook over low heat for one hour, add broth
- Add noodles, cook for a few minutes
- Serve with freshly ground pepper
