 Chocolate Almond Biscotti

Biscotti is a delicious italian cake that can be made in many different varieties. The recipe is essentially the same, just add flavorful ingredients to your taste.

Ingredients

  • 1.5 cups sliced almonds, toasted, divided
  • 1 cup butter, softened
  • 2 cups sugar
  • .75 cups coca
  • 1 teaspoon baking powder
  • 0.5 teaspoons salt
  • 3 eggs
  • 1 teaspoon almond extract
  • 3.5 cups flour
  • 0.5 cups chocolate chips
  • 0.5 cups white chocolate chips
  • 2 teaspoons shortening

Directions

  • Preheat the oven to 350 degrees and lightly grease a cookie sheet.
  • Pulse almonds in food processor until ground.
  • Beat butter in large bowl until creamy; add sugar, cocoa, baking
    powder, baking soda, and salt; beat until mixed thoroughly.
  • Beat in eggs and almond extract.
  • Beat in flour with mixer or by hand.
  • Add almonds.
  • Shape dough into two fifteen inch rolls
  • Place rolls on cookie sheet, flatten slightly
  • Bake 25-30 minutes
  • Cool one hour
  • Cut each roll diagonally into 0.5 inch slices
  • Place slices, cut side down, on un-greased cookie sheet
  • Bake eight minutes
  • Turn slices, bake another five minutes
  • Microwave chips until melted, stir in shortening
  • Drizzle over biscotti, let cool
