Chocolate Almond Biscotti
Biscotti is a delicious italian cake that can be made
in many different varieties. The recipe is essentially the same, just add flavorful ingredients to your taste.
Ingredients
- 1.5 cups sliced almonds, toasted, divided
- 1 cup butter, softened
- 2 cups sugar
- .75 cups coca
- 1 teaspoon baking powder
- 0.5 teaspoons salt
- 3 eggs
- 1 teaspoon almond extract
- 3.5 cups flour
- 0.5 cups chocolate chips
- 0.5 cups white chocolate chips
- 2 teaspoons shortening
Directions
- Preheat the oven to 350 degrees and lightly grease a cookie sheet.
- Pulse almonds in food processor until ground.
- Beat butter in large bowl until creamy; add sugar, cocoa, baking
powder, baking soda, and salt; beat until
mixed thoroughly.
- Beat in eggs and almond extract.
- Beat in flour with mixer or by hand.
- Add almonds.
- Shape dough into two fifteen inch rolls
- Place rolls on cookie sheet, flatten slightly
- Bake 25-30 minutes
- Cool one hour
- Cut each roll diagonally into 0.5 inch slices
- Place slices, cut side down, on un-greased cookie sheet
- Bake eight minutes
- Turn slices, bake another five minutes
- Microwave chips until melted, stir in shortening
- Drizzle over biscotti, let cool
