 Cannoli

Originating in Sicily centuries ago, this delicious dessert is now a staple of Sicilian cuisine. The word itself means "little tube", describing the shape and size of the pastry, which is a roll of fried pasta filled with sweet cream made primarily of riccota cheese.

Ingredients (Makes 12 cannolis)

  • Three pounds riccota cheese
  • 1.75 cups of confectioner's sugar
  • 0.5 teaspoons cinnamon
  • .23 cups semisweet mini chocolate chips
  • 12 cannoli shells
  • 0.5 cups melted chocolate
  • 0.5 cups chopped pistachios

Directions

Evenly mix the cheese, sugar, chocolate chips, and cinnamon.
Stuff into shells.
Dip one end of cannoli in melted chocolate and roll in pistachios.
